Ingredients
2 medium avocados, peeled and pitted
1 garlic clove, minced
2 tablespoons fresh lime juice, divided
1/2 teaspoon kosher salt
1 medium red bell pepper, chopped
1/2 cup frozen corn, thawed
1/4 cup chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
1 package (16.2 ounces) frozen beef & cheese mini tacos or 1 package (20 ounces) chicken taquitos
1 cup salsa con queso dip
1/2 cup drained pickled jalapenos
1/2 cup salsa
1/2 cup sour cream
2 Roma tomatoes, chopped
2 cups thinly sliced romaine lettuce
Directions

1. . In medium bowl, mash avocados, garlic, 1 tablespoon lime juice and 1/4 teaspoon salt with fork. Makes about 1 cup

 

2. In separate medium bowl, toss bell pepper, corn, onion, cilantro, oil, 1/4 teaspoon ground black pepper, and remaining 1 tablespoon lime juice and 1/4 teaspoon salt. Makes about 1 1/3 cups.

 

3. Prepare tacos as label directs in oven or air fryer. In small microwave-safe bowl, heat queso dip in microwave oven on high 1 minute 30 seconds or until heated through, stirring every 30 seconds

 

4. Place jalapeños, salsa, sour cream, guacamole and corn salsa in 5 small bowls; place bowls and queso dip on large serving platter. Arrange tomatoes, lettuce and tacos around bowls on platter
